This sucks and I’ve totally been there. I would just recommend doing whatever you can whenever you can- if you’re in school, make sure you’re not eating pop tarts from the cafeteria every day. If you make any money, you could try going to the store and buying some healthier snacks for yourself. Also, I found my mom always liked if I offered to cook dinner, and it gave me an opportunity to make sure I was eating something I knew was healthy. Good luck :)

If I could live off one food forever, it would definitely be banana ice cream 🙌🏼🍦🍌 But the chocolate sauce would have to be included 🍫😉 To make the ice cream just freeze however many bananas you want (I did about 7 😋) then blend them up in a food processor or high speed blender like a Vitamix ✨ You can get away with not adding any liquid in a food processor but you may need to add a splash of dairy free milk or water if you’re using a blender 💦 To make this bomb diggity chocolate sauce just mix 2 tbsp cacao powder with 2 tbsp agave and a dash of water 🌟 You can add pb if you want it to taste extra amazing but I’m completely out 😪 I must order some more asap!! Anyway I finished off this beauty by adding some cacao nibs and coconut 👍🏼 You all NEED to try this 🤗 I promise you’ll love it ❤️

Whole Wheat Vegan Pop Tarts:
1 cup whole wheat flour
1 cup whole wheat pastry flour
1 tbsp. coconut sugar
Pinch of salt
2/3 cup cold vegan margarine, cut into small cubes
3-4 tbsp. cold water
2 cups frozen blueberries and strawberries (mostly blueberries)
1-2 tbsp. coconut sugar
Cosmic glaze (recipe follows)
Preheat oven to 400F and line a baking sheet with parchment paper. Place frozen strawberries to a small pot over medium and cook for about 10 minutes occasionally mashing the berries down with the back of a spoon. Add coconut sugar (1 tbsp. at a time) until desired sweetness. Set aside to cool.
In a mixing bowl whisk both flours, coconut sugar and salt. Add vegan margarine and using your hands mix flour and butter until combined. Add 1 tbsp. of cold water at a time and mix with a wooden spoon until dough begins to form. Mold dough into a ball and press down onto a floured surface. Using a rolling roll the dough to about ¼ inch thick. Cut rolled dough into rectangles. I can usually get about 8-9 rectangles and then need to re-roll the dough to get another 3-4. Transfer rectangles to baking sheet, add about 2 tbsp. of the blueberry filling to each pastry (be sure to leave about ¼ inch border around the edges). Lightly dab the edges with cold water then top each pastry with another rectangle and seal the edges with the prongs of a fork. Poke a few holes on top of each pastry and bake for 20-25 minutes, or until the edges are golden. Allow to cool for 5-10 minutes then top with glaze.
COSMIC GLAZE
½ cup vegan powdered sugar
1-2 tbsp. dairy free milk
1/8 tsp. of each blue and green vegan food coloring
Sift powdered sugar into a small mixing bowl. Add dairy free milk 1 tbsp. at a time until desired consistency. Add coloring and mix lightly (until you see a colorful swirl). Top each pastry with swirly glaze.
